he world’s largest wine-producing region, wine making in the Languedoc dates back to Roman times. Today's energetic generation of young winemakers make great use of the varied 'terroirs' to produce exciting and elegant wines which hold their own against the best of Bordeaux and the New World.
The last harvest at the Château les Carrasses was in 1988. Today the winery and vineyards are being fully refurbished under the watchful eye of winemaker David Alcaraz and will produce an elegant range of quality boutique wines, with all founding owners sharing in the yield – around 40 to 50 cases per property.
Here you will discover the ancient rhythm of the vines as you participate in all aspects of wine-making. From harvest to assembly and bottling, you will embark on a journey of practical discovery that will hopefully launch a lifetime's study. In addition, each owner will benefit from private wine cellaring, which upon purchase, will be fully stocked with a carefully chosen selection of local vintages from which to start your collection.
